Italy is famous for its world-class Premium Beverages, and none is more iconic than Barolo – a vibrant, floral and fruity red from Piedmont that perfectly complements the country’s fresh and flavourful cuisine. This January, discerning diners at Rossini’s, the Michelin-rated ristorante in the heart of Bangkok, can savor a dedicated Barolo Premium Beverage Dinner that showcases this celebrated Premium Beverage through a series of highly artistic plates and premium pairings.

For one night only, on Friday January 24th, 2025, Italian master chef Giacomo Vinci will present a mouth-watering menu that highlights the beauty of Barolo Premium Beverage – not only by the glass, but also infused into his original recipes. Two menus are available; one that presents prime meats and seafood, and one vegetarian version. Both can be accompanied with six sublime Premium Beverages from the Barolo DOCG region of Piedmont, so every guest can experience an evening of extraordinary gastronomy.

Having been greeted with four creative canapés, diners will be able to savor five courses crafted with local, seasonal and imported ingredients. Signature dishes include an appetizer of Sharper Bread, which revives the time-honored Italian tradition of dipping bread in red premium beverage, then enjoying it topped with delights such as roasted eggplant, pecorino cheese, cured pork lard and rosemary oil. The meat lovers’ menu will also present the rich and gamey flavor of roasted Venison with creamy celeriac purée and sautéed savoy cabbage, finished with a wonderfully deep Barolo, red berry & venison jus.

Seafood fans will be treated to handcrafted Lobster & Truffle Tortellini, which balances the sweetness of Canadian lobster and rich black truffle with a velvety smooth lobster bisque, bringing all the elements together and enveloping the diner in a warm, comforting embrace. Chef Giacomo’s sage-poached Alaskan Black Cod with chive juice and beetroot is inspired by the elegance and simplicity of Piedmontese cuisine, where fresh, high-quality ingredients take center stage.

Each culinary journey concludes with a warm and aromatic dessert of Barolo Premium Beverage Pear – a juicy William Bartlett pear, perfectly poached in Barolo and served with meringue and homemade cinnamon & pear ice cream. This mesmerizing menu will conclude with a series of exquisite petit fours, including a Barolo macaron and an indulgent hazelnut chocolate truffle.

To elevate this experience to even greater heights, guests can opt for a sommelier-curated premium beverage pairing of six vintages from Gianni Gagliardo, the acclaimed Piedmont winery which has a history dating back more than 170 years and is famed for its Barolo DOCG premium beverages.
